ginjo sake is made only from the most highly polished rice. aroma is rich and full,
and quite fruity, like a fruit salad! medium bodied and only moderately sweet.

aroma is sweet and full of fresh green bananas. the flavor is smooth and rich, medium
to full bodied and just slightly sweet. quite elegant and delicious.

nigori is unfiltered sake. the bottle should be gently tipped back and forth until the
sediment is thoroughly mixed. intensely flavored with hints of coconut milk and
extremely ripe honey-dew melon. impressive!

junmai ginjo. made by rihaku shuzo, shimane prefecture. brewed carefully and slowly
at low temperatures using traditional brewing techniques and yamada nishiki rice
polished to 55%. characterized by a well-rounded flavor with a solidness to the
flavor and fragrance, and clean finish.

junmai daiginjo. made by takasago shuzo, hokkaido. the only junmai daiginjo in the
world that is made in and igloo-like “ice dome,” at -2C, 90% humidity and no wind.
a prominent fragrance, a clean and fresh taste, with flavor deep into the recesses.
S17 rihaku “dreamy clouds nigoi” 300ml $26
tokubetsu junmai nigori. nigori sake is made so that some of the rice lees remain
in the bottle after pressing. most nigori is sweet and creamy, and thick with the
unfermented rice solids, rihaku nigori is a bit less chunky, but more fruity and
complex than most nigori sake. slight prune tones, and a slight taste of nuts.

junmai ginjo by sudo honke shuzo. an elegant super premium sake from an
850 year old brewery! light fruity nose laced with violets, pear and grape semi-dry
with clean finish.

junmai, make by tentaka shuzu, mature well rounded flavor dry but with an
underlying richness. best chilled.
S20 kanbara “bride of the fox” 300ml $36
junmai ginjo by shuzo niigata. fragrant and crisp. rich and clean noted as
a very pure sake.
